2 cups diced onions
1 3/4 teaspoons kosher salt, divided
1/4 teaspoon freshly ground black pepper
1 pinch cayenne pepper
1/4 teaspoon garlic powder
1 tablespoon cornmeal
1/2 cup all-purpose flour
1/2 teaspoon baking powder
1/2 cup milk
2 cups vegetable oil, or as needed for frying
Instructions

3. Add remaining salt, pepper, cayenne, garlic powder, cornmeal, flour, and baking powder to onions. Mix well.
4. Pour in milk and stir until a thick batter forms. Let sit 5–10 minutes.
5. Heat 1/2 inch of oil in a skillet to 350°F.
6. Drop batter by spoonfuls and fry 3 minutes per side until golden.
7. Drain on paper towels and serve hot with dipping sauce.
Notes
Serve hot with chilled sauce. Reheat in the oven to keep them crispy. For a lighter version, try air frying spoon-sized dollops at 375°F.
