Description

These Mediterranean Salmon Patties are packed with fresh herbs, garlic, lemon, and crispy goodness. They’re perfect for busy weeknights, meal prep lunches, or light dinners. Flaky canned salmon gets a flavorful makeover with pantry staples and zesty Mediterranean flavor. Quick to prepare and super satisfying.


Ingredients

1 (14 oz) can wild-caught salmon, drained and flaked

1/4 cup red onion, finely diced

1/3 cup fresh parsley, chopped

1/2 teaspoon garlic powder

1/2 teaspoon dried oregano

Zest of 1 lemon

2 eggs

1/3 cup breadcrumbs (use gluten-free if needed)

Salt and pepper to taste

Olive oil for pan frying


Instructions

1. In a medium bowl, combine salmon, red onion, parsley, garlic powder, oregano, lemon zest, and breadcrumbs.

2. Crack in the eggs and season with salt and pepper. Mix until fully combined.

3. Form into 6–8 even patties, pressing firmly to hold shape.

4. Heat olive oil in a nonstick skillet over medium heat.

5. Add patties in batches and cook 3–4 minutes per side until golden brown and crisp.

6. Remove from heat and place on paper towel-lined plate.

7. Serve warm with a squeeze of lemon or dipping sauce of choice.

Notes

You can prepare the patties in advance and refrigerate for up to 2 days before cooking.

Serve with a simple yogurt sauce, tzatziki, or a green salad for a light meal.
